Ingredients
  

Main Ingredients

  • Fresh Udon Noodles
  • 1 Pak Choy chopped
  • 5 Eggs
  • 3 cloves Garlic minced finely
  • Sesame seeds for topping

Stir-fry Sauce

  • 1 1/2 tbsp Light Soy sauce
  • 2 tbsp Dark Soy sauce
  • 1 tbsp Sesame oil
  • 1 tbsp Brown sugar
  • 1 tbsp Rice Vinegar

Instructions
 

  • Wash and mince garlic finely.
    Wash and chop pak choy into chunks.
  • In a small bowl, crack and beat eggs. Season them with salt and pepper lightly, then set aside.
  • Cook the udon noodles according to the package instructions.
    Drain and set aside.
  • In a wok or large pan, heat some vegetable oil over medium heat.
    Add minced garlic for 1 minute, then pak choy. Add a splash of water.
  • Once the vegetables have started to soften, push them to one side of the pan.
    Add another tablespoon of vegetable oil to the other side, before introducing the beaten eggs. Scramble the eggs, and break the clumps.
  • Add the udon noodles, before adding the light and dark soy sauce, rice vinegar, sesame oil and brown sugar.
    Toss everything together, making sure the noodles are coated with the sauce.
  • Dish out your Udon Noodle Stir-fry onto plates, garnish with sesame seeds and enjoy!
