I’ve experimented with dipping these rolls in light soy sauce, but I found it a bit too salty, especially with the bacon. So, I’ve been enjoying them on their own.

How to make Bacon Avocado Spring Rolls:

    Soak the rice vermicelli noodles in hot water for 3 minutes, then drain them.
    Slice the avocado into small pieces and wash and dry the mixed salad greens.
  2. Assemble the Rolls: Dip a rice paper sheet into warm water until softened.
    Lay it flat on a clean surface and arrange the salad greens, rice vermicelli noodles, avocado slices, and bacon on top.
    Sprinkle with onion flakes and sesame seeds. Roll up the rice paper sheet tightly around the filling ingredients.
  3. Repeat and Enjoy: Repeat the process with the remaining rice paper sheets and filling ingredients. Once all the rolls are assembled, arrange them on a serving platter and serve immediately.

Ingredients
  

  • 4 Rice Paper Rolls
  • 1 Ripe Avocado
  • 4 Bacon slices
  • 1/2 cup Rice Vermicelli soaked in hot water for 3 minutes and drained
  • 1 cup Mixed Salad Greens
  • 1/8 cup Onion Flakes
  • 2 tbsp Sesame seeds

Instructions
 

  • Cook the bacon until crispy, then set aside on paper towels to drain excess grease.
    Soak the rice vermicelli noodles in hot water for 3 minutes, then drain and set aside.
    Slice the avocado into small pieces and set aside.
    Wash and dry the mixed salad greens.
  • Fill a shallow dish with warm water.
    Dip one rice paper sheet into the warm water for a few seconds until it softens. Be careful not to oversoak it.
    Remove the rice paper sheet from the water and let excess water drip off.
  • Lay the damp rice paper sheet flat on a clean surface.
    Arrange a line of mixed salad greens horizontally across the center of the rice paper sheet.
    Sprinkle some cooked rice vermicelli noodles over the salad leaves.
    Place a line of sliced avocado pieces on top of the salad greens.
    Add a line of bacon slices on top of the avocado.
    Scatter onion flakes and sesame seeds evenly over the filling ingredients.
  • Starting from the bottom edge of the rice paper sheet, tightly fold it over the filling ingredients.
    Fold the sides of the rice paper sheet towards the center.
    Continue rolling upwards until the entire sheet is rolled tightly into a cylinder shape, enclosing the filling.
    Repeat the process with the remaining rice paper sheets and filling ingredients.
  • Once all the rolls are assembled, arrange them on a serving platter and enjoy!
