Spicy Peanut Butter Noodles: A tantalizing blend of creamy peanut sauce, savory garlic, and fiery chili oil, delivering a flavor-packed dish that's both comforting and satisfying.

Ingredients

  • 200 g Udon Noodles
  • 4 cloves Garlic minced

For the sauce

  • 3 tbsp Peanut Butter
  • 2 tbsp Light Soy sauce
  • 1 1/2 tbsp Rice Vinegar
  • 2 tbsp Chili Garlic Oil
  • 1 Scallion sliced finely
  • 1 handful Crushed peanuts for topping

Instructions

  • Bring a pot of water to a boil.
    Add the udon noodles and cook according to the package instructions until they are al dente.
    Once cooked, drain the noodles, reserving some of the hot water for later use.
  • In a mixing bowl, combine the peanut butter, light soy sauce, rice vinegar, and chili garlic oil.
    Mix until smooth and well combined.
    Adjust the consistency of the sauce by gradually adding some of the hot water from the cooked noodles.
    Stir until you achieve your desired thickness.
    Keep in mind that the sauce will thicken as it cools.
  • In a large skillet or wok, heat a bit of oil over medium heat.
    Add the minced garlic and sauté for a minute or until fragrant.
    Be careful not to burn the garlic.
  • Add the cooked udon noodles to the skillet with the garlic.
    Pour the prepared peanut sauce over the noodles and toss everything together until the noodles are evenly coated with the sauce.
    Garnish the noodles with sliced scallions and crushed peanuts.
    Serve hot and enjoy!
