Ingredients
400gChickenThighs or breast
2Bell peppers
3clovesGarlic
1/2Onion
1tbspCajun spices
1tbspGarlic powder
3tbspFlourAll purpose
1Green onion(for garnish, optional)
Instructions
Dice your chicken breast into cubes, you can also use chicken thighs (probably even better).
Generously season your chicken with cajun spice, garlic powder, salt, and pepper. Allow it to marinate in the refrigerator for 30 minutes.
In the meantime, cut your onions and your bell peppers into thin strips, and mince garlic.
After 30 minutes of marinating, mix your chicken bits into flour.Feel free to add 2 tbsp of Cornstarch to the flour for extra crispiness (optional).Make sure every piece of chicken is well coated.
Deep-fry your chicken in vegetable oil for 5-6 minutes. Don't overcrowd your pan/pot and if needed, cook chicken in multiple batches so that they don't stick together for better crisp.
In another pan, lightly cook your peppers, onions and garlic in vegetable oil on medium heat for 4 minutes.
Once the chicken starts to get brown, drain the excess oil and add the chicken to your vegetables, mixing thoroughly.Season chicken and vegetables with salt and pepper generously.
Plate the chicken on a large dish, top it with chopped green onions for garnish, and enjoy the dish!
