Ingredients
1/2Onionthinly sliced
250gGround beef
3clovesGarlicminced
2Scallionsthinly sliced (for garnish)
1tspSesame seeds(for garnish)
2cupsWhite rice
2Bok choy
For the Stir Fry Sauce:
3tbspSoy sauce
1tbspRice vinegar
1tspSesame oil
2tbspBrown sugar
1/2tbspGochujang (Korean Red Chili paste)
Instructions
Cook rice according to package instructions. Keep it warm until ready to serve.
In a small bowl, combine soy sauce, rice vinegar, sesame oil, brown sugar, and gochujang. Mix well until the sugar is dissolved.
Heat a skillet over medium heat and add a bit of oil.Add sliced onions and minced garlic to the skillet.Sauté until the onions are translucent and fragrant, about 3-4 minutes.
Push the onions and garlic to the side of the skillet and add the ground beef to the center.Break up the beef with a spatula and cook until browned and no longer pink, stirring occasionally.
Once the beef is cooked, pour the sauce mixture over the beef in the skillet.Stir well to coat the beef evenly in the sauce.Allow the mixture to simmer for a few minutes until the sauce thickens slightly and coats the beef beautifully.
While the beef is simmering, bring a pot of water to a boil.Add the bok choy to the boiling water and blanch for 2 minutes.Drain the bok choy well and set aside.
To serve, spoon the beef and sauce mixture over the warm cooked rice.Arrange the blanched bok choy on the side of the plate.Garnish with additional sliced scallions and sesame seeds if desired.
