  • 2 Chicken Legs
  • 2 tbsp Garlic Powder
  • 2 tbsp Cajun Powder
  • 2 tbsp Sweet Chili Powder
  • 1 cup All-purpose Flour
  • 1/2 cup Cornstarch
  • 2 cups Buttermilk
  • Vegetable Oil

Instructions

  • In a mixing bowl, combine garlic powder, cajun powder, sweet chili powder, salt, and pepper. Mix well.
    Separate the chicken thighs from the drumsticks if they are still attached.
    Rub this flavorful mixture directly onto the chicken legs, ensuring they are evenly coated with the seasoning blend.
  • In a separate shallow bowl, mix together the all-purpose flour and cornstarch.
    Season the flour mixture with salt and pepper to taste.
  • Pour the buttermilk into another shallow bowl.
  • Dip each seasoned chicken piece (thigh and drumstick) into the buttermilk, ensuring they are fully coated.
  • Next, dredge the chicken in the flour-cornstarch mixture, pressing gently to adhere the coating to the chicken.
  • Dip the coated chicken back into the buttermilk, then into the flour-cornstarch mixture again, ensuring a double coating.
  • In a large, deep skillet or Dutch oven, heat vegetable oil to 350°F (175°C) over medium heat.
  • Fry the chicken for about 15 minutes, turning occasionally, until the coating is golden brown and the chicken is cooked through.
    The internal temperature should reach 165°F (75°C)
  • Once cooked, remove the fried chicken from the oil and transfer it to a plate lined with paper towels to drain any excess oil. Season lightly with salt.
